There are so many great choices from the classic set, the boys and the girls set that to choose just one will be hard. Can I pick and choose from each set and make my own "set" or do I need to go with a premade set?
Another question, the Classic/boy/ girl sets from the Deluxe package, are these the read alouds? Or for the child to read? Where do the leveled readers come into play?

The classics and boy/girl sets that you mentioned are for storytime (you read). Yes, you can mix them or use your own. You just need a book for each genre covered.
As far as the leveled readers for the student, you use the ER readers or DITHOR 2/3 if that is where your child places. We are still in the ER's, so I don't have experience with DITHOR(Drawn Into the Heart of Reading) yet. HTH
