Just curious how I could spread Beyond over 2 years. Which boxes day 1, which boxes day 2, which boxes daily. Thanks!!

I would do math and reading everyday regardless of why you are going half speed.
Then I would consider doing storytime daily, doing everything in the guide twice per genre. You could just do it every other day, but we find it difficult to read a literature book every other day.
For the language arts box, it would depend on why you are going half speed. If your child struggles with the physical act of writing, I would do half of the box each day (spelling one day and copywork/grammar the next). If your child is capable and willing to do the while box daily, you can also so that (using list 1 for the first year of Spelling and list 2 the next year). For grammar, you would move into Rod and Staff 2 the second year, doinga lesson (or less) daily. And for copywork, you could add the memory verse and quotes from history as needed.
For the Bible box, I would either split the music and memory verse practice (doing the activities one day and music the next) OR do it all daily, repeating each day except day 5.
That leaves history, rotating box below the history reading, and poetry. These you would do every other day. I would do the history reading and poetry study on separate days. Then the rotating box could fluctuate based on how you do storytime. Occasionally, it is nice to split the activity over two days, which would be "perfect."
