It's a big challenge for sure, especially as you said adding another baby after 9 years!
My thought is don't put pressure on yourself because you can't do life like you did before, and it's not supposed to be that way. Think of all the wonderful life lessons and science he is learning from having a baby around, and character. Read, talk about everything that's happening, inspire his curiousity. Don't worry about "checking off the boxes" just do what you can when you can.
Though I'll warn you, homeschooling with a 1 year old in the house is probably the most challenging time with a little one. They are awake for most of the daytime hours and yet they are not really able to be self-directed or trusted for very long without supervision (intense training time for little ones). But God always gives the grace to get through each and every stage and we grow from it.
