Proofreading is definitely covered in the dictation section of Preparing. They have to proofread what they wrote for dictation, then compare it with the text for further errors, then rewrite it again (usually the next day for dictation).

The kiddos are also exposed to editing through their written narrations starting with Preparing Hearts. There is an editing list of things to watch for within written narrations (provided in the Appendix of Preparing).
