Just wondering if I would be able to substitute other Thorton Burgess animal books for the storytime plans in the Little Hearts manual?
I have 4 of the titles used plus at least 5 other different ones. I hate to buy the whole set for only 1/2 the books, but if there are activities other
than questions/ narrations then I will. Any body have any opinion/ suggestions?

The guide has questions specific to each book. You could figure out how to modify the questions to the book you are reading, but it would be more work. Many of them are public domain though, so you can get them as free ebooks.
