I am looking at the book packages for PHFHG and wondering for an older student, would I need to order the self study extensions package AND the self study deluxe history package for newly independent readers? AND the basic history read alouds package. And What's the different between these packages?

The history read-alouds are for you to read to your child and they expand on the history being studied. They are in the storytime box.
The independent books are in the box labeled independent history study and they read and do drawing and writing/copying from them--completely on their own.
The extension books are only for if you need to beef up the guide for an older student-usually used when people need to combine children and therefore need to beef it up for the older one. I use them just for my daughter to read on her own because she is a little bit older and can read really well and she loves it. There are examples of assignments to do with the reading, like oral or written narrations. These are books for them to read by themselves.
You need the history read alouds and the independent even if you decide you need the extensions.

You could skip the independent study if you'd like--but I think it's a great part of the program and not to be missed. My daughter loved that part.

Yes! It's not too much if they are properly placed.
