Starting Dictation after Christmas

With all of this talk about spelling and dictation, I have decided to switch from All About Spelling to dictation after Christmas for my oldest. My question is though - do you always start with level 2 in Preparing? Some of the passages look really easy but she may not know others. Would you skip the ones you know she knows? Or would you just count it as an easy day and do only one? Would you do 2 in a day if you knew that you child could easily do both?

And suggestions would be greatly appreciated.

Thanks - these links are perfect.

I think I will start her in the middle of 2. I will see how it goes. If it seems like it is too easy, we will jump toward the end of 2. I think realistically she could do level 3 but I think there are still things she could learn in 2. She is in 4th grade but figure she should make it half way through 3 by the end of this year. And I am happy with that.
