Is there a list somewhere of what the skills being developed in each guide are? I think that would be helpful for me and insightful.

You can find it in the PDF file titled "introduction" for each guide on the main webpage for each guide where the PDFs for the sample weeks are located. Scroll through the various units, materials list and then you will find the "Learning through History" and "Learning the Basics" Components pages. The skills are found in each description.
