This isn't a meal idea but it's related. I buy the crock pot plastic liners and freeze meals in them. Then I thaw it in the fridge over night and put in the crock pot in the morning. One tip I'd like to share ( I found out the hard way) potatoes turn black when they are frozen, then thawed, so any recipe that uses them ( pot roast), just toss them in the crock pot in the morning. We did this when we went on vacation and it was great! I've even made coq au vin this way. I tie the bags closed with twist ties and put a label on it saying what it is and if I have to add anything else like wine, etc to it. It's really worked well for us especially since my dh won't eat leftovers or soup, so I had to come up with something to streamline my day. I'm planning to do a major stock pile of "bag dinners" because I'm getting ready to have an operation and will be out of it for about 3 weeks. I get recipes from www.crockpot.com and from various crock pot cook books. Hope that helped someone!

LOL...hmmm how about the good ole "crust of bread and glass of water" :twisted: :lol: :twisted:

Just kidding....

Here's a fast favorite at our house..
Bologna Mountians
You need mash potatoes (the good ole left overs are perfect) mix in about 3/4 to 1 cup shredded cheddar cheese,(I've added sour cream on occassion to make potatoes a lil more creamy) and place about an ice cream scoop size on top of the sliced bologna. Toss in the oven at oh 350degrees until steamy hot. Serve with steamed veggies or cold salad.

I'll make double batches of spaghetti and freeze the rest in portion sizes for hubby's lunches and for our lunches on those days where chaos seems to rule.

I'll use left over baked chicken to make dishes like fried rice, chicken-bog, chicken salad, and bbq chicken sandwhiches.

When I buy ground beef I'll go ahead and premake hamburger patties and meatloaf then freeze it until I'm ready to cook it.

Home-made lumpia (eggrolls) with a salad is a fast meal for us too.

We like:

1. Pepperoni roll-ups (Canned crescent rolls, sprinkle each triangle with mozzerella or cheddar (or both) and add mini-pepperonis, roll up starting with the thin point side, and bake about 10 minutes or so). Serve with fruit or salad.
2. Ramen noodle cups-of-soups. We get these from Walmart for about 17 cents each.
3. Toast with Peanut butter and raisins, fruit.
4. Pita bread with Hummus, cucumber slices, and carrots
5. Tuna salad (I make it with boiled eggs, mayo, salt, pepper). They like it on wheat bread or in pita pockets. We have this with chips or pretzels.
6. Grilled cheese and tomato soup.
7. Chicken and cheese quesadilla's (using leftover chicken, or frozen boiled chicken), I just sprinkle some taco seasoning on top and put them in the oven until the cheese melts.

We usually just have either PB&J or lunch meat sandwiches of some sort with fruit or veggies and dip. The above are just some of the things I do to change it up.
