Don't think of yourself of behind, just delayed. Being that there are 35 weeks in a guide and 52 weeks in a year, you can catch up to where you originally wanted to be within the next school year or two, while continuing to take an appropriate amount of time off.

But remember that the read-alouds cover 9 literary genres, with one book per genre, and when substituting, you have to substitute for a book of equal or lesser value. FMS = Fine Motor Skills. Basically, any activity that will assist little ones in strengthening and gaining control over their fingers in preparation for learning to write (cutting, gluing, play-doh, Lego, etc).

I just have a quick reply to your concerns about reading: you can use the Emerging Readers with any guide, as needed by your child. FYI, if you want the hands on activities Carrie wrote to go with the 1st grade math you'll need to purchase the Beyond guide. From what I've read, it's worth getting the Beyond guide just for those activities, and then you'll already have it for the next year.
